Summer starts with a bang

Our biggest event to date  – we were approached by The Royal Grammar School committee to host their 500^th anniversary ball. Where would be big enough, we decided on the lawns at Guildford Cathedral and worked with Alresford Marquee to sort out a spectacular tent. The numbers just kept creeping up and suddenly we were over 620 guests! We kept calm and planed meticulously, arranged the 80 staff members and we knew that everything was going to be perfect. The guests were served a new season asparagus and parmesan tart, followed my free range chicken breast in a pea, pancetta and tarragon sauce and finished with crème burlee, rhubarb and apple compote and shortbread biscuits. It was an amazing evening and the whole team was on a high for the busy summer ahead.
