Here at the Refectory we know how difficult weddings are to organise and we want to make the day and planning as stress free as possible! For this reason we have put together an amazing plan for the day to see how you can use the Refectory to its full!

We are also dedicated to helping you plan every aspect of your wedding.  We can introduce you to fabulous DJ’s, florists, cakes makers and bands suitable for every budget

Enjoy a glass of sparkling wine and a selection of our chef’s canapés, all to be served either in the Refectory, or on the South Garth of the cathedral, overlooking Guildford and the beautiful Surrey Hills

Wedding Breakfast

Our menus are created using locally sourced ingredients to ensure that everything is as fresh as possible, our food is freshly prepared on site and we take great care to ensure that every plate is of the highest standard.  We understand that each wedding is individual, and have therefore put together some menus that we hope will cater for everybody.

To Start

Butternut squash soup with cumin scented cream.

Chicken liver parfait served with crisp breads our homemade apple and beetroot jam.

Smoke salmon and prawn martini with caper berry salad, pickled cucumbers, caper berries and a tangy American style cocktail sauce.

Roasted Mediterranean vegetable and brie tart served with Secrette’s wild leaves.

Main – to choose from

Rolled Shoulder of British Lamb served on a Mediterranean ratatouille served with a rich lamb sauce and crisp roasted new potatoes.

Pan roasted breast of chicken served on crushed new potatoes with a pea, pancetta and tarragon sauce and seasonal vegetables.

Pan roasted salmon with crushed new potatoes, champagne hollandaise sauce and seasonal vegetables.

Wild mushroom risotto finished with morels, truffle oil, parmesan biscuit and chervil. (v)

Pudding

Sicilian lemon tart served with raspberry compote, vanilla cream and chocolate cigars.

Sticky toffee pudding, the British classic served with a toffee sauce and clotted cream.

Eton Mess – gooey meringues with deep berry compote, fresh berries, vanilla cream and white chocolate shavings or mango and passion fruit.

Classic cream Brulee served with homemade shortbread biscuits and berry compote.

Freshly brewed fair trade tea and coffee served to your table

Buffet option

A selection of hand carved traditional meats served with homemade chutneys, relishes and pickles.

Oak smoked salmon and fresh water prawn garnished with sweet and sour cucumber, wedges of lemon and a lemon crème fraiche.

Freshly baked feta, roasted pepper and pine nut filo tarts.

Caper and Berry handmade coleslaw.

Herby cous cous salad with roasted peppers and sweet balsamic onions.

Freshly tossed Caesar salad with parmesan croutons and smoked bacon.

Seasonal new potato salad with a caper, red onion and parsley dressing.

Selection of breads.

Selection of Dips and sauces.

Decadent chocolate brownie.

Freshly brewed fair trade tea and coffee.

Within your package, we will also include half a bottle of wine per person.

Evening buffet

We offer a selection of buffet options:

Bacon butties – cooked on the grill and served in floured baker’s baps with Heinz ketchup, HP brown sauce or our caramelized tomato and onion chutney.

Cheese Board – A selection of British and continental cheeses served with crackers, our homemade chutneys, celery, grapes and breads.
